Recipe: Pumpkin Croissant Pudding

Yup!  And it’s as amazing as it sounds!!!  Serve it for breakfast or dessert, perfect for Fall brunches and showers!

Ingredients
  1. 1 1/2 cups whole milk
  2. 3/4 cup canned solid-pack pumpkin
  3. 1/2 cup sugar
  4. 2 large eggs plus 1 yolk
  5. 1/2 teaspoon salt
  6. 1 teaspoon ground cinnamon
  7. 1/2 teaspoon ground ginger
  8. 1/8 teaspoon ground allspice
  9. Pinch of ground cloves
  10. 5 cups cubed (1-inch) croissants
  11. 3/4 stick unsalted butter, melted
Instructions
  1. Toss the croissants in the melted butter. Set aside.
  2. Whisk together the milk, sugar, eggs, spices and pumpkin. Add the buttered croissant pieces and mix to coat evenly.
  3. Add mixture to an un-greased 8x8 baking dish.
  4. Bake at 350 for 25-30 minutes, or until the custard is set.
