Recipe: Creamy Garlic Pasta

Before I started posting recipes on here regularly I had a baby recipe blog that was my pride and joy.  I actually still use it all the time as a reference for my very favorite recipes that I’ve archived.  I’m slowly catching this blog’s recipe index up with that one’s because I prefer to have everything I love in one space.  Anyhoo, this recipe was my most pinned from my old food blog so I figured it was high time to get it on here in a beautiful printable recipe card form for your ease.  It’s so easy and so flavorful and can be a whole meal if you add some cooked chicken breast strips.  Easy enough for a weeknight but elegant enough for entertaining!

Creamy Garlic Pasta
Serves 4
A creamy pasta dish bursting with garlic and parmesan flavor enhanced with the crispness of fresh parsley.

Ingredients
  1. 2 teaspoon olive oil
  2. 4 cloves garlic, minced
  3. 2 tablespoons butter
  4. 1/2 teaspoon pepper
  5. 3 cups chicken broth
  6. 1/2 pound angel hair pasta
  7. 1 cup grated Parmesan cheese
  8. 3/4 cup milk
  9. handful fresh parsley, diced*
Instructions
  1. In a medium pan, heat olive oil over medium heat. Add the garlic and stir for 1-2 minutes.
  2. Add butter and melt, stirring constantly.
  3. Add pepper and 3 cups chicken broth. Bring to a boil.
  4. Add the pasta and cook according to box directions. (Add a little more chicken broth if the noodles start to stick to the bottom and burn.)
  5. Add the cheese, milk, and fresh parsley when the pasta is cooked to your desired tenderness and mix thoroughly.
  6. Serve immediately.
Notes
  1. Add seasoned grilled chicken strips on top to complete the meal!
  2. *You can sub the fresh parsley with 1 1/2 tablespoons dried parsley if you don't have any fresh on hand.
