Recipe: delicious two ingredient egg casserole

This is one of my very favorite go-to recipes for entertaining/brunches/showers!!  It is so easy but so delicious and presentable, you can literally just throw it together and fancy it up.  It’s rich and creamy and you can top it with whatever you want to personalize it.  It works great for a potluck type get-together, too, because everyone just brings a different topping!

Ingredients
  1. 15 eggs
  2. 1 pound sharp cheddar cheese, grated
Toppings of choice
  1. cubed avocado
  2. salsa
  3. bacon bits
  4. sour cream
  5. diced green onions
  6. diced tomatoes
  7. crumbled sausage
  8. etc.
Instructions
  1. With an electric beater, beat eggs until light and fluffy.
  2. Fold in shredded cheese.
  3. Pour egg mixture into a lightly greased 9x13 casserole dish and bake at 375 for 45-60 min, or until an inserted knife in the middle comes out clean. DO NOT OVER BAKE!
  4. Once cooked, let sit for about 10 minutes before cutting.
  5. Plate a square of the egg casserole and top with desired toppings. Enjoy!
Notes
  1. We love serving with a fancy breakfast potato, fresh baked bread and fresh fruit!
