Recipe: Favorite Fondue!

 John made this for me several times when we were dating and it has been a major favorite to entertain with ever since.  It’s actually completely simple but is so fancy that everyone is always impressed.  It’s also a great pot luck type entree, you just make the fondue and everyone brings a dipper!  If you don’t have a fondue pot you can put a smaller pot of the cheese sauce in a larger sauce pan with some water in it and turn it on low so that the simmering water keeps the fondue warm.  Just a little trick.  Everyone should have at least one fondue pot, though, for the record.

Ingredients
  1. 6 Tablespoons butter
  2. 6 Tablespoons flour
  3. 2 cups milk
  4. 2 teaspoons dry mustard
  5. pepper to taste
  6. 4 cups shredded cheddar cheese
Fondue dippers of choice, examples
  1. roasted potatoes or sweet potatoes
  2. brawtworst or chicken apple sausage, cubed
  3. soft french bread, cubed
  4. steamed veggies
  5. apples or pears
Instructions
  1. In a medium sauce pan melt the butter over medium low heat.
  2. Add the flour and whisk in until incorporated. Stir continuously for 1-2 minutes.
  3. Add the milk, pepper, and dry mustard and whisk to incorporate. Stir continuously for a few minutes until the sauce begins to thicken. Turn burner to low.
  4. Add the cheese and stir with a wooden spoon until completely melted in.
  5. Transfer cheese sauce to a heated fondue pot.*
  6. Serve with favorite dippers!
Notes
  1. *You can buy gel fuel pots to keep under your fondue pot in the picnic section of most grocers. Or obviously you can buy them online.
  2. -Remember you don't need a fondue pot to serve this! Just put your pot of cheese in a water bath over medium-low heat to keep it heated and fluid.
