Recipe: Pistachio Maple Oatmeal with Fruit and Chobani Greek Yogurt

When Chobani invites you to share a favorite recipe featuring their delicious Greek yogurt, you rack your brain trying to figure out which one out of the many delicious options you should share.  It was no easy task, but I decided on my favorite oatmeal recipe!  This one is easy, so healthy, filling, and a breakfast option, which is my favorite meal of the day!  It wouldn’t be the same without the tangy accent of the Chobani, though.  It contributes to a unique blend of flavors that is a great start to the day or a great snack before you hit the hay.  It could also be a darling idea for a brunch or shower—an oatmeal bar!  Of course the topping options are endless, but make sure you don’t leave out the Chobani!  It rounds out all the flavors and provides an unexpected zip.  So excited to be partnering with Chobani on this fun project!  Check out #MadeWithChobani on Instagram and Chobani.com for other awesome contributions!

Pistachio Maple Oatmeal Bowl of Dreams

A beautiful and delicious breakfast bowl of oatmeal, fruit, Chobani Greek yogurt, and accents of pistachio and maple.

Ingredients
  1. 1.5 cups quick oats
  2. 2.5 cups water for boiling
  3. 1/8 teaspoon salt
  4. Chobani Greek yogurt, plain or vanilla
  5. fresh fruits and berries of choice for topping, ie strawberries, blackberries, blueberries, bananas, etc.
  6. 1/4 cup shelled pistachios, divided
  7. 1/4 cup pure maple syrup, divided
Instructions
  1. Bring water and salt to a boil.
  2. Add quick oats and stir for about 1 minute. Remove from heat and let sit for 5 minutes or so.
  3. Top with fruit, a few dollops of Chobani Greek yogurt, a few tablespoons of pistachios, and a few tablespoons of pure maple syrup.
Notes
  1. If the rest of your oatmeal clumps up and you want to think it out again, add a little milk or almond milk and stir while reheating over low heat until you get the consistency you prefer!
