Recipe: German Oatmeal Cake

If there were ever a single dessert that tasted just like Christmas, this would be it.  It is my very favorite Christmas cake!  Just in time for your celebrations this week.  This recipe comes from a dear friend of mine who, back in the day, received a full-ride college scholarship for cooking and baking, so you can be sure that this is a killer recipe.  I will be keeping this one in my family tradition arsenal forever.

A perfectly festive spiced oatmeal cake that is great all year long but particularly in the winter months.

Ingredients
  1. 1 cup oatmeal
  2. 1 cup margarine
  3. 1 1/3 cups boiling water
  4. 1 cup brown sugar
  5. 1 cup sugar
  6. 2 eggs
  7. 1 1/3 cups flour
  8. 1 teaspoon cinnamon
  9. 1 teaspoon nutmeg
  10. 1/2 teaspoon salt
  11. 1 teaspoon soda
  12. for topping
  13. 1 cup brown sugar
  14. 1 cube margarine
  15. 1/2 cup canned milk
  16. 1 cup chopped nuts {I left these out}
  17. 1 cup coconut
  18. 1 teaspoon vanilla
Instructions
  1. Combine oatmeal, margarine, and boiling water.
  2. Mix sugars and eggs into mixture.
  3. Sift flour and spices and combine with egg mixture.
  4. Pour into a 9x13" pan and bake for 30 min at 350.
  5. For topping, boil together the brown sugar, margarine and canned milk.
  6. Add in the nuts, coconut and vanilla and stir to incorporate.
  7. Pour topping mixture over hot cake and serve.
Notes
  1. Serve with a tall glass of cold milk!
