W30 Smokey Pulled Pork with Pineapple Slaw

Another DELICIOUS Whole30 recipe for you all!  I got so sick of sweet potatoes and avocado while I did Whole30, so this unique flavor combination of smokey pork with sweet pineapple could NOT have been more welcome.  Whole30 or not, this is such a yummy, filling dish.  This post includes three recipes: the pork, the homemade mayo for the slaw, and the slaw itself.  Of course you can make this with non-Whole30 approved ingredients, too, for a those of us who are not currently eating clean.

Whole30 Smokey Pulled Pork with Pineapple Slaw
Serves 4
A uniquely flavored clean/Paloe/Whole30 dish combining smokey pork with sweet pineapple. Can be made with mainstream ingredients, as well, for those not eating clean.

For the Pork
  1. 2 lb pork roast
  2. 1/2 tbl pepper
  3. 1/2 tsp sea salt
  4. 1/2 tsp chili powder
  5. 1/4 cup balsamic vinegar
  6. 1/2 tsp all natural liquid smoke
  7. 2 cups compliant chicken broth
  8. diced avocado for topping at the end
For the Mayo
  1. 2 room temp eggs
  2. 1/4 tsp salt
  3. 1/2 tsp dry mustard
  4. 2 tbl white vinegar
  5. 1.5-2 cups oil (I used 1/2 Olive oil, 1/2 avocado oil)
For the Slaw
  1. 2 cups cole slaw salad mix
  2. 1/4 cup compliant/homemade mayo
  3. 3/4 tbl apple cider vinegar
  4. 1 cup fresh pineapple
  5. 1 cup roasted cashews
  6. Salt and pepper to taste
For the Pork
  1. Combine all spices and rub on all sides of roast.
  2. Place roast in slow cooker and pour the balsamic, broth and liquid smoke around in and swish it a little to mix it in.
  3. Cook on low for 6-8 hours then shred with a fork and mix in with the juices.
  4. Top with pineapple cashew slaw and diced avocado.
For the Mayo
  1. Combine egg, salt, dry mustard and vinegar in a blender and mix for a few moments.
  2. SLOWLY drizzle in the oil while it's mixing and it will thicken.
  3. Keep in fridge for up to 2 weeks.
For the Slaw
  1. Combine all ingredients and chill for 30 minutes before serving. Spoon over pork and top with diced avocado, if desired.
Notes
  1. *I usually half the mayo recipe since I do not use enough in a two week span to make it work making the entire recipe, since it only keeps for two weeks.
