Recipe: Sopapilla Cheesecake

 This recipe is an absolute favorite among my family.  I’ve shared it with so many and they all come back and say it was the hit of the meal.  It’s creamy, buttery, sweet, flaky….. and fattenings.  BUT!  For a special occasion, a little fat ne’er hurt nobody.  And in this case, I might go as far as saying that a little fat has helped a lot of people feel rill gooooood.  It can be enjoyed hot or cold, for dessert or as a breakfast pastry, or straight out of the pan, as I have found many times.  I bet you’ll find that out for yourself, too, if you make it.

Ingredients
  1. 2 packs crescent rolls
  2. 12 oz. cream cheese (1 1/2 bricks)
  3. 1.5 tablespoons vanilla
  4. 1 3/4 cup sugar, divided
  5. 1 teaspoon cinnamon
  6. 1 stick butter, melted
Instructions
  1. Spray a 9x13 baking dish with non stick cooking spray, and preheat oven to 350.
  2. Open one can of crescent rolls and mold the dough into the bottom of the pan to form the bottom crust of the cheesecake.
  3. In a small bowl, mix together cream cheese, vanilla, and 1 cup sugar. Spread cream cheese mixture into crust and make sure all the dough is covered.
  4. Open the second can of crescent rolls and mold dough over top the cream cheese mixture to form the top crust.*
  5. In a small bowl, combine melted butter, cinnamon, and remaining 3/4 cup sugar. Evenly spread butter mixture over top the top crust layer.
  6. Bake for 25-30 minutes, let stand about 10 minutes before cutting and serving.
Notes
  1. *This is a tad tricky, just pinch and pull a lot to make sure the dough can be stretched to cover the entire pan's worth of cream cheese mixture.
