Recipe: Sweet and Spicy Peanut Thai Noodles

noodlesYou guys, this is a goodie.  It’s so easy, it can feed the masses, it’s even better the next day, hot or cold….and it’s THAI!!  I’m on a major Thai kick these days (with a side of Tums…) and this one delivers.  Plus it’s pretty healthy, for a pasta dish at least.  Give it a try and let me know what you think!

Sweet and Spicy Peanut Thai Noodles
Serves 4
An easy sweet and spicy Thai noodle dish that is even better the next day! Serve hot or cold, topped with shredded carrots, green onions and peanuts.

Ingredients
  1. 1 box whole wheat linguine pasta
  2. 1 tablespoon crushed red pepper flakes (or less for less spice)
  3. 1/2 cup sesame oil
  4. 3/4 cup honey
  5. 3/4 cup soy sauce
  6. 1 cup cooked, shredded chicken (rotisserie chicken works great!)
  7. green onions, chopped
  8. peanuts, chopped
  9. carrots, slithered
Instructions
  1. Boil the linguine according to box directions. Drain.
  2. Heat sesame oil and crushed red pepper in a small saucepan over medium heat. Strain out pepper and reserve oil.
  3. To the oil, whisk in the soy sauce and honey.
  4. Toss chicken and sauce mixture with noodles.
  5. Serve hot or cold with green onions, carrots and peanuts on top.
Notes
  1. The more sauce, the better! Make a little extra if you like.
  2. Regular linguine works just as well. Or any long noodle.
