Obsession of late:

So I’ve been trying really hard the past month to eat healthy, cutting down on fat and refined sugar, and upping the veggies and fruits and fish.  And I just have to say that I invented a delicious healthy snack that I have at least twice a day.  Because it is “healthy” and all, I decided not to post it on my cooking blog because I try to reserve Nummies for gourmet dishes bursting with flav.  But I have to share it with you guys, it’s just delish!!

Introducing the Bagel Thin Margherita Pizza!
{What you need}
1 Bagel Thin (loooooovvvveee them!!) I use plain.
2/3 cup Fat Free Mozzarella cheese, divided
1 firm roma tomato, sliced
dried basil
dried oregano
salt

Place each slice of the bagel thin face up on a baking sheet covered in tin foil.  To glue the tomato slices to the bagel thin sprinkle about a tablespoon of cheese on each slice.  Place tomato slices on the cheese and sprinkle desired amount of basil and oregano and salt.  Cover with the rest of the cheese, evenly on each slice.  Broil on LOW for 5-6 minutes.

I learned in Ireland that it is delicious to dip pizza in Mayo, so I enjoy this the most with a little Light Mayo on the side for dipping.  I’m telling you—it is a PERFECT treat for those of us watching our weight.  Try it and tell me what you think!!

Of course, this would be amazingly delicious if you used full fat everything, as well, for those of you who don’t care about calories:)
